The 2018 Cabernet Sauvignon 20th Anniversary bottling displays a deep garnet-purple color and bold scents of crème de cassis, blackberry preserves and black cherry compote with fragrant wafts of underbrush, lavender, chocolate box and wild sage. The full-bodied palate is densely packed with bright, energetic black fruits, supported by firm, grainy tannins and bold freshness, finishing long with loads of floral and mineral sparks.
Expect to find a dark purple color, intense black and blueberries, white pepper spice, violets, vanilla, toasty French oak, white chocolate, a broad mid palate with balanced acidity, depth of flavor, and a fleshy sexy round finish.
Hues of dark eggplant with touches of amethyst at the rim give an immediate sense of richness and elegance. This is confirmed with a nose of ripe, dark fruit, roasted coffee and chocolate, macerated raspberries, violets and spicy highlights. The soft, velvety entrance evolves into a fresh mid-palate filled with raspberry, red currant and boysenberry. This lingers towards a dark blackberry reduction with a touch of earthiness on the long, yummy finish.
Predominantly Pinot Noir, we've blended in a touch of Chardonnay to lift the fruit profile. The distinct creaminess of this wine is undeniable. Lush in floral aromatics, it is aged longer in barrel and in bottle giving it a rich savory edge with curious depth of flavor and complexity. Unfortunately we won't have access to these grapes in the future but are very pleased with how stunning this wine has become over time. It is ready to drink now, but will develop into something even more intriguing with age.
Their 2021 Pét Nat Pinot Grigio is a fresh and clean example of pétillant naturel wine. Bottled with primary yeast sediment, it shows lovely yeast flavors characteristic of bottle aging. Early picking allows this wine to carry low alcohol along with an adunbance of energy and lightness.
Their signature critter is back for its fourth year! As the statewide drought continues to challenge our growers, less water means smaller berries. However, it also means greater concentration of flavor. Their Albariño from Gomes Vineyard is electric in freshness, luscious with ripe tropical fruit, yet light on the palate. We feel that the 2021 vintage has amplified these characteristics, making it the best version of itself to date.
Stunning color in the glass, an electrifying nose showcases black currants, cassis, cigar box and red fruit. The palate is opulent, plush and structured with integrated sweet tannins showcasing notes of dark blackberry, black cherry, and bittersweet chocolate dance through an everlasting and strong finish.
This powerful, dense, concentrated effort needs bottle age but is an incredibly impressive 2017. Giving up lots of chocolaty dark fruits, violets, Asian spices, and loamy soils , it has a big, mouth filling mid-palate, ripe tannins, and a great finish. Try to hide the bottle for 4-5 years, but it should evolve for two decades.
Deep garnet-purple in color, the 2019 Eternity comes bounding out of the glass with exuberant scents of warm cassis, baked plums and stewed blackberries, with hints of fruitcake and exotic spices. Full-bodied, opulent, and super concentrated, with plush tannins and sweet, spicy black fruits, it finishes long and fantastically showy.
The Black Label Cabernet has Coombsville’s dark, structured aromatics as its cornerstone, blended into the rich and refined style that is Covert’s hallmark. The team harvests by hand in the cool early mornings and sends the grapes through two rounds of rigorous sorting—first as whole clusters, then again as de-stemmed individual berries. After cold maceration, the fruit is fermented by naturally occurring wild yeasts for three to four weeks. Once this initial fermentation is complete, we gently crush the grapes with a vertical press directly into barrels for a secondary malolactic fermentation. The wine then spends 18-26 months in barrel, as needed for each vintage. We rack at most twice per year, and bottle without fining or filtration. By minimizing human intervention with the wine, it is aimed to amplify the voice of the terroir.
The 2018 Sage Estate Cabernet Sauvignon is a graceful and agile wine with wonderfully wild aromatics and energy. The nose opens with a brambly thicket of berries, delicate licorice root and spicy, smoky spice.
A juicy mouthful of purple and red fruits centers the core, with gentle touches of sweet fennel, tobacco and minerals offering nuance and depth. Well-integrated tannins blend seamlessly with the fruit core, and finish with a final whisper of berries and anise.
