The 2017 Corralitos Brut is the second released, but first produced. They skipped over this release initially, in favor of allowing this wine to develop and subsequently blossom. After spending nine months in barrel and 34 months in bottle, this wine was finally ready to disgorge. Due to the extended tirage aging, we’ve given this wine the recently disgorged (RD) designation. Aromas speak loudly of peach, nectarine, and bing cherry with meyer lemon, ruby grapefruit, and Marcona almonds on the palate. This is an emphatic expression of California and Corralitos. Very limited production.

Their 2021 Pét Nat Pinot Grigio is a fresh and clean example of pétillant naturel wine. Bottled with primary yeast sediment, it shows lovely yeast flavors characteristic of bottle aging. Early picking allows this wine to carry low alcohol along with an adunbance of energy and lightness.

This powerful, dense, concentrated effort needs bottle age but is an incredibly impressive 2017. Giving up lots of chocolaty dark fruits, violets, Asian spices, and loamy soils , it has a big, mouth filling mid-palate, ripe tannins, and a great finish. Try to hide the bottle for 4-5 years, but it should evolve for two decades.

The Black Label Cabernet has Coombsville’s dark, structured aromatics as its cornerstone, blended into the rich and refined style that is Covert’s hallmark. The team harvests by hand in the cool early mornings and sends the grapes through two rounds of rigorous sorting—first as whole clusters, then again as de-stemmed individual berries. After cold maceration, the fruit is fermented by naturally occurring wild yeasts for three to four weeks. Once this initial fermentation is complete, we gently crush the grapes with a vertical press directly into barrels for a secondary malolactic fermentation. The wine then spends 18-26 months in barrel, as needed for each vintage. We rack at most twice per year, and bottle without fining or filtration. By minimizing human intervention with the wine, it is aimed to amplify the voice of the terroir.

The 2018 Estate Cabernet Sauvignon is comprised of a small barrel selection of the finest fruit from our vineyard. Deep and brooding, the 2018 Estate will have a long life, evolving over time.

As the foundation of the Ellman line-up with an intense garnet hue, it overdelivers with notes of cassis, cigar box and Chinese Five Spice—replete with hints of fennel, whole black peppercorns, star anise, cloves and cinnamon. Walking the tightrope of finesse with extreme power, the palate gives way to generous flavors of blackberry, cassis, cola and nuanced notes of musk, porcini and hibiscus, which interplay with the stately framework. This is a wine that commands respect, and will continue to reveal itself overtime.

The 2019 Brother’s Blend is the perfect introduction to the Ellman Family Vineyards line-up. With the core blend from the Estate vineyard coupled with a neighboring Coombsville site, the 2019 is approachable, and then some. Offering up a deep ruby cast and intense aromatics from dark fruits like blackberries and currants to baking spice—think cinnamon, vanilla and clove!— and a hint of woodsy, herbals notes like thyme, fresh earth and cigar box. Generous on the palate, complexity abounds with lush red and black fruits, from dark, sweet cherries to bramble fruits and a slew of plum varieties, giving way to notes of pie crust, cacao, as well as hints of roses and violets. With a creamy texture and juicy nature, it packs excellent density without a rough edge in sight.
